Recipe for Rice Pudding / Dulce de Leche with cinnamon, vanilla and lemon
Ingredients:
1 cup of white rice
4 cups of whole milk
1 cup of sugar
1/2 cup of dulce de leche
1 cinnamon stick
1 vanilla bean (or 1 teaspoon of extract)
Zest of 1 lemon (only the yellow part, in thin strips)
Cinnamon powder for sprinkling
Preparation:
Wash the rice and place in a pan with 2 cups of water. Cook over medium heat until the water has evaporated and the rice is soft.
Add the milk, the halved vanilla bean (or the extract), the cinnamon stick, the lemon peel strips, and the sugar. Cook over low heat, stirring occasionally, until the rice absorbs the milk well and acquires a creamy texture, about 20 to 30 minutes.
Mix in the dulce de leche, incorporating it gently so that it melts and mixes with the rice pudding, giving it a caramelized color.
Remove the cinnamon, lemon and vanilla. Place in small bowls, sprinkle with cinnamon powder and garnish with a slice of lemon and a touch of vanilla.
