Fresh Italian Pasta Recipe
Ingredients
300 g plain flour
3 eggs
2 tablespoons olive oil
1 tablespoon water
Preparation

Put the flour, eggs, olive oil and 1 tablespoon of water in the mixing bowl and set the Knead function to 3 minutes.

Let the dough rest for 30 minutes.

You can roll out the dough using a pasta machine or by hand using a rolling pin: sprinkle the rolling pin and the work surface with flour and roll out the dough until you have a very thin sheet (about 2 mm thick) in the shape of a rectangle. During the process, sprinkle with flour whenever necessary so that the dough does not “stick”.

Cut it as desired:
• Tagliatelle: Using a sharp knife, cut the pasta into strips
• Bow ties: Cut small rectangles of pasta and, with your fingers, press the center of the rectangle to form a “bow”
• Lasagna: Make rectangles of pasta

Let the pasta dry for about 20 minutes before cooking it.

Cook the pasta in boiling water, with salt to taste and a drizzle of olive oil for about 5–8 minutes (the time varies depending on the thickness/size of the pasta).
