Fresh Fruit Cheesecake Recipe
Ingredients
230 g granola
170 g pitted dates
20 g chia seeds
20 g olive oil
500 g cream cheese
100 g coconut sugar
275 g whipping cream
2 tablespoons lemon juice
2 oranges
1 kiwi
150 g strawberries
100 g blueberries
Preparation
In a food processor, place the granola, pitted dates, chia seeds and olive oil.
Blend until you get a smooth mixture, but do not create a paste.
Shape small balls with your hands and evenly assemble the base and sides of a tart tin, pressing the mixture against the tart tin. Keep refrigerated.
In a mixer, beat the cream cheese at room temperature with the coconut sugar on high speed until you get a smooth and creamy mixture. Reduce the mixer speed and gradually add the very cold cream. Increase the speed again and beat until stiff peaks form. Add the lemon juice and mix. Distribute evenly over the base.
Refrigerate until the mixture is firm, about 4 hours.
Cover with the sliced fruit and serve.
Suggestion: serve with a mug of Pensal prepared with water.
