Delicious Two-Color Basmati Rice
Ingredients
1 onion
2 garlic cloves
olive oil to taste
300 g pumpkin
1 cup of long Continente Bio basmati rice
2 cups of vegetable stock
1 tsp saffron
100 g spinach
1 red chili pepper
toasted almonds to taste
Preparation
1.
• In a medium saucepan, sauté the chopped onion and the finely chopped garlic cloves in a dash of olive oil.
2.
• When the onion is tender, add the diced pumpkin.
3.
• Let it brown for about 2 minutes and add the rice.
4.
• Fry it for about 1 minute and cover with the vegetable stock.
5.
• Lower the heat, cover the pan, and cook until the rice is very tender.
6.
• Divide the rice mixture between 2 bowls.
7.
• Add the saffron to one of them, mixing it well.
8.
• Add all the rice back, add the spinach and the chopped, seeded chili pepper and mix.
9.
• Serve immediately sprinkled with toasted almonds.
