Delicious Sweet Potato Fritters
Ingredients
120 g chickpea flour
1 sweet potato (large)
2 cloves garlic
juice of 1/2 lemon
1 handful parsley
1 teaspoon cumin
Salt
pepper (black pepper)
sesame seeds
Preparation
Peel and cut the sweet potato into cubes. Cook in boiling water for about 15 minutes. When ready, mash it like a purée.
In a bowl, mix the chickpea flour, chopped garlic, cumin, chopped parsley, lemon juice and pepper. Now add the sweet potato and mash everything with your hands. The dough should be a little soft and slightly sticky. If necessary, add a little water.
Preheat the oven to 180°C. Make the balls and cover with sesame seeds. Place them on the baking tray (already covered with baking paper).
Bake for 20 minutes. Remember to turn the potato balls over and over to make sure they are evenly mixed.
It's ready. Serve with a mixed salad. If you prefer, add soy sauce to make it even tastier.
