Delicious Strawberry and Lime Cheesecake Dessert
Ingredients
For the base:
250 g toasted Maria biscuits
150 g butter
For the filling:
800 g cream cheese
150 g brown sugar
70 g brown sugar
50 g flour
1/2 tbsp. of salt coffee
2 limes (juice and zest)
3 eggs
1 egg yolk
200 g of cream
For the topping:
500 g of strawberries
50 g of sugar
40 g of water
3 limes (juice and zest)
To decorate:
12 strawberries
Mint to taste
Preparation
1.
Prepare the base: place the biscuit in the bowl and set 10 seconds at speed 8.

Add the butter and set 4 minutes at 60ºC at speed 4.
3.
Line a round springform pan with baking paper and spread the biscuit mixture. Press down firmly and smooth with a spatula or spoon. Bake for 15 minutes at 160ºC.

Prepare the filling: in a clean bowl, add the cream cheese and set for 2 minutes at speed 5.

Add the sugars, flour and salt and set for 4 minutes at speed 6.

Add the lime juice and zest and set for 1 minute at speed 4. Add the beaten eggs and yolk and set for 1 minute at speed 4.

Add the cream and mix gently with the spatula.
8.
Pour the mixture into the pan and bake for 35 minutes at 180ºC. Reduce the temperature to 90ºC and cook for a further 25 minutes.
9.
Prepare the topping: in a clean bowl, add the strawberries, sugar, water, lime zest and juice and set for 15 minutes at 70ºC at speed 1 with reverse rotation.
10.
Unmold the cheesecake and serve cold with the strawberry sauce. Decorate with strawberries and mint leaves.
