Delicious Recipe for Duck Risotto with Red Wine
Ingredients
1 large onion
5 tbsp. butter
1 celery stick
2 carrots
250 g mushrooms
100 g bacon
350 g risotto rice
350 ml red wine
1.5 l chicken stock
1 package of shredded duck Fácil&Bom
½ cup grated parmesan cheese
chopped parsley to taste
Preparation
1.
Sauté the chopped onion in 3 tbsp. butter.
2.
When it is translucent, add the sliced celery and chopped carrots and cook over low heat for 4 minutes.
3.
Add the sliced mushrooms and the bacon cut into pieces and cook for another 2 minutes.
4.
Add the rice, mix and cool with the red wine.
5.
Add ladles of chicken stock, stir until evaporated, and add more stock.
6.
Cook the rice in this way for about 18 minutes.
7.
Add the duck, cheese, and remaining butter and mix gently.
8.
Serve immediately with chopped parsley.
