 Delicious Penne with Vegetables in a Pan


Ingredients


1 onion

Olive oil to taste

1 red pepper

1 courgette

2 peeled tomatoes

300g of Continente Bio Organic Rigate penne pasta

1L of vegetable stock

Coriander to taste

2 tbsp of grated Parmesan cheese





Preparation


1.

In a medium saucepan, sauté the onion cut into half-moons in a dash of olive oil.


2.

When it is very tender, add the pepper cut into strips, the courgette cut into half-moons and the diced tomatoes.


3.

Wrap the pasta and pour the vegetable stock over everything.


4.

Let it cook over low heat until the stock has evaporated and the pasta is al dente.


5.

If necessary, add a little more stock.


6.

Sprinkle with chopped coriander and parmesan and serve immediately.
