Delicious Creamy Corn Cake
Ingredients
2 cups (tea) of yellow corn flour
1/2 cup (tea) of warm milk
3 cups (tea) of wheat flour
2 cups (tea) of sugar
50 g of grated cheese
100 g of grated coconut
2 cans of sweet corn
1 small glass of coconut milk
3 cups (tea) of milk
4 egg yolks
2 tablespoons (soup) of margarine
1 tablespoon (soup) of baking powder
4 egg whites, beaten until stiff
Preparation
Mix the corn flour with the warm milk and leave for 10 minutes.
Then add the wheat flour, sugar, grated cheese, grated coconut and set aside.
In a blender, beat the sweet corn, coconut milk, milk, egg yolks and margarine.
Add to the reserved dry ingredients.
Finally add the baking powder and beaten egg whites.
Place in a 40X30cm rectangular pan greased with margarine.
Place in the oven and leave for approximately 35 minutes.
