Delicious Cashew Chicken Recipe
Ingredients
650 g chicken breast
Salt to taste
Pepper to taste
30 g olive oil
3 garlic cloves
20 g cornstarch
180 g water
70 g soy sauce
1 dessert spoon of sugar
1 tablespoon of sesame oil
140 g unsalted roasted cashew nuts
Sesame seeds to sprinkle
Preparation

Cut the chicken breasts into cubes (not too small, so they don't fall apart) and place them in a bowl. Season with a little salt and pepper to taste. Set aside.

Place the garlic cloves in the bowl and press the Crush function. Use the spatula to scrape down the pieces that have accumulated on the sides of the bowl. Add the olive oil and cook for 3 minutes at 120ºC on speed 2.

Add the reserved chicken cubes and cook for 5 minutes at 100ºC on speed 1 with Reverse Rotation. Use the spatula to release the chicken from the blade.

In a bowl, dissolve the cornstarch in the water. Add the mixture to the bowl, along with the soy sauce, sugar and sesame oil. Cook for 6 minutes at 100ºC on speed 1 with Reverse Rotation. Check the chicken is cooked and, if necessary, cook for a few more minutes at the same speed and temperature.

Remove the chicken from the bowl. Add the unsalted roasted cashews and mix with the spatula.

Serve over a bed of white rice and sprinkle with sesame seeds to taste. You can serve it with blanched broccoli.
