Walnut Cake Recipe π
Ingredients
200g chopped walnuts
200g wheat flour
200g brown sugar
150ml sunflower oil
4 eggs
1 teaspoon baking powder
1 teaspoon vanilla essence
1 pinch of salt
Icing sugar for decoration (optional)
Preparation:
Preheat the oven to 180ΒΊC and grease a pan with butter and flour.
In a blender or food processor, lightly crush the walnuts, without letting them turn into flour; it is good to have some pieces left to give texture to the cake.
In a large bowl, mix the brown sugar, oil and eggs. Beat until you get a creamy and homogeneous dough.
Add the wheat flour, baking powder, salt and vanilla essence. Mix well, and then incorporate the chopped walnuts, stirring gently.
Pour the batter into the pan and bake for about 35-40 minutes, or until the cake is golden brown and firm to the touch (do the toothpick test).
Remove from the oven and let cool. Sprinkle with powdered sugar and decorate with a few whole walnuts, if desired.
This cake is perfect for autumn afternoons, accompanied by a good cup of coffee!
