Lettuce Cake πŸ₯¬ 😊


Ingredients


1 lettuce, washed and dried

3 sprigs of fresh mint, washed and chopped

4 eggs

120ml of vegetable oil

300g of wheat flour T55, unbleached

1 dessert spoon of baking powder

400g of white sugar

1 teaspoon of matcha powder

Zest of 1 lemon

Tomato Jam

1kg of peeled and seeded tomatoes

400g of brown sugar

2 cinnamon sticks

Lettuce Syrup

1 lettuce, washed and dried

350g of brown sugar

3 sprigs of fresh mint

50ml of brandy

Juice and zest of 1 lemon

Finishing

Powdered sugar to taste





Preparation


1. Start by making the cake: mash the lettuce with the mint, eggs and vegetable oil and set aside. 2. In a bowl, combine the flour, yeast, sugar and matcha powder and mix well.

3. Now add the wet ingredients and mix well until you get a smooth dough.

4. Add the lemon zest and set aside.

5. Heat the oven to 150ΒΊC and grease one or more molds to bake the dough.

6. Pour the dough into the molds and bake until the cake is golden and fluffy, about 25 to 35 minutes; set aside and let cool.

Tomato jam

1. In a pan, cook and caramelize the tomatoes with the sugar and cinnamon.

Lettuce syrup

1. In another pan, combine the lettuce with the sugar, brandy, lemon and mint.

2. Bring to the boil and reduce, adding water if necessary.

3. Remove from the heat and while still hot, blend the syrup; strain the syrup and let it settle.

Finishing

1. Serve the cake with tomato jam, powdered sugar and lettuce syrup!
