Ingredients


1 Pumpkin

1 Onion

4 Garlic Cloves

2 Tablespoons of Ginger Powder

1 Tablespoon of Curry Powder

400 ml of Coconut Milk

Q.s. Olive Oil

Q.s. Pepper

Q.s. Salt





Preparation


Make your taste buds sing with a different roasted pumpkin soup.


1. Start by cutting the top of the pumpkin with a sharp knife, and with your hands remove as many seeds as you can. Finally, scrape them out with a spoon.


2. Then, heat the oven to 190ΒΊC, season the inside of the pumpkin with olive oil, pepper and salt, and bake with the cut side down for 45 to 60 minutes.


3. When ready, remove the pumpkin pulp and then prepare the soup itself. Heat a pan with a dash of olive oil, chop an onion and sautΓ©.

4. In the meantime, chop 4 cloves of garlic and grate the ginger.

5. Add the garlic to the onion and stir well until golden. Then add the ginger, salt, pepper, curry, pumpkin pulp and coconut milk and bring to the boil.

6. As soon as it starts to bubble, remove from the heat and blend with a hand blender.

7. Finally, serve this original soup in the pumpkin shell and garnish with a dash of coconut milk.
