Coconut cookie recipe 😊😊
Ingredients:
1 cup of butter (at room temperature)
1 cup of refined sugar
1 egg
1 teaspoon of vanilla extract
2 cups of wheat flour
1 cup of shredded coconut
1/2 teaspoon of baking powder
1 pinch of salt
Preparation:
In a large bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla and beat a little more until everything is well incorporated.
In another bowl, mix the flour, shredded coconut, baking powder and salt. Then, gradually add this dry mixture to the butter mixture, mixing with a spatula until you get a homogeneous dough.
Form small balls with the dough and place them on a baking sheet lined with parchment paper, leaving a little space between them. If you want, you can flatten them slightly with a fork to make them flatter.
Bake in a preheated oven at 180°C for about 12 to 15 minutes, or until the edges are golden brown. The aroma that fills the kitchen is a sign that they are ready!
Remove from the oven and let cool completely before storing in airtight containers. If you like, sprinkle a little more shredded coconut on top for extra flair.
Tip:
For an even crispier texture, add a little toasted coconut along with the shredded coconut.
These cookies are also delicious with a touch of lemon or orange zest in the dough, giving them a citrus aroma that goes very well with the coconut.
