 Butter Beans with Poached Eggs 😊🍷


Ingredients


4 tablespoons of olive oil

1 large chopped onion

1 bay leaf

2 cloves of minced garlic

200g of smoked bacon in strips

1 ripe tomato, skinned and seeded, diced

1 carrot, diced

1 teaspoon of cumin

200ml of white wine

1 teaspoon of paprika

Salt

Pepper

700g of cooked butter beans in a can

5 sprigs of coriander

4 eggs

Olive oil to taste

1 tablespoon of tomato paste

Water to taste





Preparation


1. Sauté 1 large chopped onion, 1 bay leaf and 2 cloves of minced garlic in 4 tablespoons of olive oil.

2. Add 200g of smoked bacon in strips and fry. 3. Add 1 ripe tomato, peeled and seeded, cut into cubes, remove the bay leaf and add 1 carrot, cut into cubes.

3. Season with 1 teaspoon of cumin, 1 teaspoon of paprika and pepper to taste.

4. Cool with 200ml of white wine and let the alcohol evaporate.

5. Chop the stems of 5 sprigs of coriander and add to the pan.

6. Add 700g of cooked butter beans, add a little water, adjust the seasoning and cook for 15 minutes after it starts to boil.

7. Boil the eggs wrapped in a sheet of cling film with a drizzle of olive oil.

8. Add 1 tablespoon of tomato paste to the beans.

9. Remove the eggs and dip them in cold water to stop the cooking.

10. Remove some of the beans from the pan, mash them into a puree and add to the pan to thicken the sauce. 11. Add the eggs to the pan, sprinkle with chopped coriander and serve immediately.
