Ingredients

For the pasta:

250 g pasta (spaghetti, penne, fusilli or your choice)
Water to cook the pasta

For the meat sauce:

300 g ground beef (rump, chuck or your preference)
1 medium onion, chopped
2 cloves garlic, chopped
1 red or green bell pepper, chopped (optional)
2 ripe tomatoes, chopped (or 1 can of peeled tomatoes)
2 tablespoons tomato paste
1/2 cup water
1 teaspoon sugar (to balance the acidity of the tomatoes)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper to taste
Olive oil for sautΓ©ing
Grated Parmesan cheese to serve (optional)
Fresh basil leaves to garnish (optional)




Preparation
Prepare the pasta: In a large pot, boil plenty of water with a little salt. When the water is boiling, add the pasta and cook according to the package directions until al dente. Drain and set aside, keeping some of the cooking water.

Prepare the meat sauce: While the pasta is cooking, heat a drizzle of olive oil in a large skillet or saucepan over medium heat. Add the chopped onion and sautΓ© until translucent, about 3-4 minutes. Add the minced garlic and sautΓ© for 1 more minute, being careful not to burn it.

Add the meat: Add the ground beef to the pan and cook until browned, breaking up any large pieces with a wooden spoon. Season with salt and pepper to taste.

Add the vegetables: If using bell peppers, add them now and sautΓ© for 2-3 minutes until softened. Then add the chopped tomatoes and cook for another 5 minutes, until the tomatoes begin to break down.

Finish the sauce: Add the tomato paste and mix well. Add the water and sugar, stirring to combine. Season with dried oregano and basil. Simmer gently for 10-15 minutes, until thickened and the flavors intensify. If the sauce is too thick, add a little of the reserved pasta cooking water.

Toss the pasta with the sauce: Stir the cooked pasta directly into the sauce pan, tossing well so that the pasta absorbs the flavor of the sauce. Adjust the seasoning with more salt and pepper if necessary.

Serve: Serve the pasta hot, sprinkled with grated Parmesan cheese and garnished with fresh basil leaves, if desired.
