Egg, Avocado and Tuna Wrap 😊👍
Ingredients
4 eggs
Salt and pepper to taste
Oregano to taste
Olive oil to taste
2 tbsp almond flour
4 tbsp cream cheese
1 avocado
1 small ripe tomato
Fresh coriander to taste
1 can tuna in olive oil
Lemon juice to taste
Wild arugula or watercress
Vinegar to taste
Preparation
1. Crack 2 eggs into a bowl.
2. Add salt, pepper and oregano to taste and beat.
3. Heat a medium frying pan with a dash of olive oil.
4. When the pan is hot, pour in the egg mixture, rotating the pan so that it reaches all sides.
5. When the egg is a firm disk, set it aside and repeat the process with the other 2 eggs.
6. Place the pulp of an avocado in a deep dish, add the cream cheese and mash everything coarsely.
7. Cut the tomato, remove the seeds and chop into cubes.
8. Chop the coriander to taste and add to the tomato.
9. Season with lemon juice, olive oil, a pinch of salt and pepper and mix everything together.
10. Open the can of tuna and drain well.
11. Put half of the tomato filling in one of the wraps, the other half in the other.
12. Place the tuna on top, roll it up a little, fold the ends, and roll until the end.
13. Season the arugula with a little vinegar, olive oil and salt, and mix to make a simple salad as a side dish.
