Shrimp Salad with Mango Dressing
Ingredients
250 grams of cleaned prawns
1/2 mango
1/2 chili pepper
1/2 avocado
1/2 red onion
1/2 lemon
Cherry tomatoes and chestnuts to taste
Mix of leaves of your choice to taste
Chopped parsley and olive oil to taste
method of preparation
Season the shrimp with salt and pepper.
Grill in olive oil and set aside.
Blend the mango and lemon juice in a blender. Transfer to a bowl.
Add salt, black pepper, parsley, olive oil and chopped chili pepper.
Mix everything and set aside.
Slice the red onion and set aside.
Assemble the salad with a bed of leaves, cherry tomatoes cut into 2 parts, sliced avocado, onions and chopped chestnuts.
Place the grilled prawns on top and finish with the mango sauce. Serve immediately! Enjoy.
