Delicious Coconut Pie [no sugar, no gluten] ☺️☺️



Ingredients:


5 eggs

120 g of grated coconut

6 tablespoons coconut flour

1 level teaspoon of baking yeast

120 g of natural sweetener of your choice (I used Xylitol)

fine zest of 1/2 lemon

1 package of light cream

butter q.s. to grease the mold






Preparation:


Turn the oven on to 190º C.

Grease a removable bottom tart pan with a little butter. Reserve.

Beat the eggs with the xylitol, add the fine lemon zest.

Add the 6 tablespoons of coconut flour and yeast, continue to beat. Then add the grated coconut and finally the cream, which must be at room temperature. You will obtain a voluminous mixture. Now pour into the previously greased and reserved tart pan.

Bake for 15 minutes until golden. Do the toothpick test. Be careful that it is moist inside, don't be fooled.

Remove from the oven, let it cool and if you like, sprinkle the surface with grated coconut.
