 Portuguese Salad Recipe


Ingredients:


300g of desalted cod

3 medium potatoes

2 eggs

1 small red onion

10 black olives

1 ripe tomato

Lettuce and arugula leaves (or others of your preference)

Extra virgin olive oil to taste

White wine vinegar or lemon juice to taste

Salt and black pepper to taste

Fresh chopped parsley and cilantro for garnish





Preparation:


Preparing the Cod:


Cook the cod in a pan with boiling water for about 10 minutes, or until it is tender. After cooking, remove the cod, drain well and flake it into thick flakes, removing bones and skin.

Cooking the Potatoes and Eggs:


In a pan with water and a pinch of salt, cook the potatoes until they are tender but firm. Peel and cut into medium cubes.


Boil the eggs separately for about 10 minutes, or until they are hard. After cooking, peel them and cut into slices.


Assembling the Salad:


In a large serving dish, make a bed with the lettuce and arugula leaves.


Add the cooked potatoes, shredded cod and sliced ​​eggs.


Spread the thinly sliced ​​red onion, diced tomatoes and black olives.


Seasoning:


Drizzle the salad with a good drizzle of extra virgin olive oil and add vinegar or lemon juice to taste.


Season with salt and black pepper, adjusting to your taste.


Finish with a pinch of chopped parsley and cilantro to add freshness and color.


Serving Tips:


This salad is delicious served at room temperature, which allows the flavors of the cod and olive oil to stand out even more. Serve with good rustic bread and, if possible, accompany with a fresh vinho verde for a true Portuguese experience.
