Green Beans with Egg Yolk Sauce Recipe
Ingredients:
500g fresh green beans
4 egg yolks
1 tablespoon fresh lemon juice
Zest of 1 lemon
2 tablespoons butter
Salt and pepper to taste
Chopped parsley and chives for garnish
Preparation:
Cook the green beans in boiling water with a pinch of salt until tender but still crunchy, about 5 to 7 minutes. Drain and set aside.
In a bowl, whisk the egg yolks with the lemon juice and zest until well combined and uniform in color.
Melt the butter in a saucepan over low heat. Add the egg yolk mixture, stirring constantly so that the sauce thickens and does not curdle. Cook for about 2 minutes until creamy.
Season with salt and pepper to taste, then stir the green beans into the sauce, mixing well.
Serve hot, garnished with parsley, chives and a few more lemon zest to enhance the flavor.
