 Fish Soup


Ingredients


200g of sea bass fillets, skinless

1 chopped onion

1 anchovy

1 diced carrot

2 tablespoons of olive oil

1 tablespoon of tomato paste

3 tablespoons of coriander

100g of elbow pork

Ciri piri piri, to taste

Salt and pepper

1.5lt water

Croutons:

100g of stale bread/from the previous day

Olive oil

4 cloves of minced garlic

Salt

1 teaspoon of smoked paprika





Preparation


1. In a pan, place 2 tablespoons of olive oil. Add 1 anchovy and break it up with a spatula. Sauté 1 chopped onion with a pinch of salt.

2. Add 1 tablespoon of tomato paste and a few drops of piri piri. Clean the pan with a little water and, finally, add 1 sea bass fillet. Season with pepper and mix all the flavors.

3. Add 1 carrot cut into small cubes, 1.5 liters of boiling water and a little salt. Let it cook.

4. When it starts to boil again, add 100g of elbow pasta and let it cook for 10 minutes.

5. Prepare the croutons: cut 100g of bread into cubes.

6. Pour a generous amount of olive oil into the frying pan. Add 3 to 4 cloves of minced garlic.

7. Add the bread, coating it well in the olive oil. Season with salt and 1 teaspoon of smoked paprika.

8. Remove the excess olive oil with absorbent paper. Season the soup with a handful of coriander.
