Ingredients:
Dough:
2 cups of wheat flour
1/2 cup of sugar
150g of cold butter, cubed
1 pinch of salt
4 to 5 tablespoons of ice water
Filling:
6 apples, peeled and cut into thin slices (green or gala apples)
1/2 cup of sugar
2 tablespoons of wheat flour
1 teaspoon of ground cinnamon
Juice of 1/2 lemon
1 tablespoon of butter (optional)
Finishing:
1 beaten egg for brushing
Sugar and cinnamon for sprinkling
Preparation:
Preparing the dough: In a large bowl, mix the flour, sugar and salt. Add the butter and knead with your fingertips until you get a coarse crumble. Gradually add the ice water until you get a smooth dough. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Filling: In a bowl, mix the sliced apples, sugar, flour, cinnamon and lemon juice. The flour will help thicken the filling as the pie bakes.
Pie assembly: Divide the dough into two parts. Roll out one half with a rolling pin and line a pie pan with it. Pour the filling on top, distributing the apple slices evenly. If desired, add small pieces of butter over the apples for extra moisture.
Topping: Roll out the second half of the dough and cover the pie. Brush with beaten egg and make small slits in the top so that steam can escape during baking. Sprinkle sugar and cinnamon on top for an extra touch of flavor and crunch.
Baking: Bake in a preheated oven at 180°C for about 45 to 50 minutes, or until the pie is golden brown and the filling is bubbly.
Serving: Allow to cool slightly before serving. Apple pie is even better accompanied by a scoop of vanilla ice cream or whipped cream.
