Pork Loin Stew Recipe ππ·
Ingredients:
1 kg of pork loin
2 large chopped onions
3 minced garlic cloves
2 sliced carrots
3 diced potatoes
2 chopped ripe tomatoes
200 ml of dry white wine
500 ml of beef broth
Rosemary and thyme to taste
Salt and pepper to taste
Olive oil for sautΓ©ing
Preparation:
Season the loin with salt, pepper, rosemary and thyme. Let it rest for about 30 minutes to absorb the flavors.
Sear the meat: Heat a large pan with a drizzle of olive oil and brown the loin on all sides, ensuring that the meat takes on a nice, caramelized color. Remove and set aside.
SautΓ© the vegetables: In the same pan, add a little more olive oil and sautΓ© the onion and garlic until golden. Add the carrots, potatoes and tomatoes and cook for a few more minutes.
Deglaze with white wine: Add the white wine to the pan, scraping the bottom to release the remaining flavors. Let the alcohol evaporate.
Slow cook: Return the tenderloin to the pan, add the beef broth and adjust the salt. Cover and cook over low heat for about 1 hour, or until the tenderloin is tender and the sauce is thick.
Finish: Remove the tenderloin from the pan, slice into juicy pieces and serve with the sauce and vegetables on top.
