 Vegetarian Risotto Recipe


Ingredients


20 g dried mushrooms

40 g dried tomatoes

200 g round rice (Arborio)

1 tsp aromatic herbs

10 g pine nuts

1 tbsp olive oil

1 onion (small)

100 ml white wine

400 ml broth

salt

pepper

50 g grated parmesan cheese





Preparation


Step 1 - - Cut the onion into squares and sauté them in a pan with a dash of olive oil. Add the rice and stir until translucent.

Step 2 - -Add the herbs, dried tomatoes and mushrooms. Stir.

Step 3 - - Add the white wine and mix until all the liquid is absorbed. Then add half of the broth and season with salt and pepper. Over medium heat, continue stirring until completely absorbed.

Step 4 - - Add the other half of the broth and stir until all the liquid is absorbed. Add the parmesan and mix. Finally, add the pine nuts.

Step 5 - -It's ready. When serving, garnish with pine nuts if you prefer. Enjoy!
