 Spicy Shrimp and Potato Soup Recipe


Ingredients


(Serves 4):


500g medium shrimp (peeled and peeled)

3 medium potatoes (diced)

1 medium onion (chopped)

2 cloves garlic (crushed)

1 red bell pepper (chopped, optional)

1 tablespoon olive oil

1 teaspoon cayenne pepper (or chopped chili pepper, adjusted to your taste)

1 teaspoon hot paprika (or sweet paprika, if you prefer less heat)

1 can peeled tomatoes (or 3 chopped fresh tomatoes)

1 liter fish stock or water

200ml coconut milk (optional, for a creamy touch)

Salt and black pepper to taste

Chopped fresh parsley or cilantro (to finish)

Juice of half a lemon (optional, to balance flavors)





Instructions Preparation:


Preparing the base: In a large saucepan, heat the olive oil and sauté the onion and garlic until golden and aromatic (about 3 minutes). Add the paprika (if using) and sauté for another 2 minutes.

Add the spices and tomatoes: Add the Calabrian pepper and paprika, stirring well for 1 minute. Add the peeled (or fresh) tomatoes and mash lightly with a spoon. Cook for 5 minutes, until a thick sauce forms.

Cook the potatoes: Add the chopped potatoes and the fish stock (or water). Season with salt and black pepper. Cook over medium heat for about 15 minutes, or until the potatoes are tender.

Add the shrimp: When the potatoes are almost done, add the shrimp and coconut milk (if using). Cook for 5-7 minutes, until the shrimp are pink and cooked through (be careful not to overcook them, as they may become tough). Finish: Adjust the salt, add lemon juice (if desired), and garnish with chopped parsley or cilantro. Serve hot, accompanied by crusty bread or toast.


Tips:


Spiciness:


Adjust the amount of chili pepper to your liking. If you prefer a milder flavor, reduce the amount of Calabrian chili pepper or substitute black pepper.

Variation: You can add corn, carrots, or zucchini for more texture.

Homemade broth:


If you have shrimp shells, use them to make homemade broth by boiling them with water, onion, and garlic, then strain and use in the soup.
