Rice with Corn and Cheese Recipe


Ingredients


(Serves 4):


2 cups white rice (or parboiled rice)

1 can sweetcorn (about 200g, drained)

200g grated mozzarella cheese (or other melty cheese, such as Prato or Cheddar)

1 small onion, chopped

2 cloves garlic, crushed

2 tablespoons butter or olive oil

4 cups boiling water

Salt to taste

Black pepper to taste (optional)

Chopped parsley or chives for garnish (optional)





Instructions:


Sauté the seasonings: In a medium saucepan, heat the butter or olive oil. Add the onion and sauté until translucent. Add the garlic and sauté for another minute, without letting it burn. Cook the rice: Add the rice to the pan and stir for 1-2 minutes, allowing the grains to absorb the flavor of the stew. Add the boiling water, season with salt, and mix well. Reduce the heat, cover the pan, and cook for about 15 minutes, or until the rice is almost cooked and the water has been absorbed.

Stir in the corn and cheese: When the rice is almost cooked (still slightly moist), add the drained corn and stir. Then, sprinkle the grated cheese over the rice. Cover the pan again and cook for another 2-3 minutes over low heat, until the cheese is completely melted.

Finish: Turn off the heat, stir gently to incorporate the melted cheese into the rice and corn. Adjust the salt and pepper, if desired. Sprinkle with chopped parsley or chives for a fresh touch.


Serve hot as a side dish or main course. It goes great with a green salad or grilled meat.
