Grilled Beef with Vegetables Recipe
Ingredients
(Serves 4):
Meat: 600g of grilled beef (rump, sirloin, rump cap, or filet mignon)
Salt to taste
Black pepper to taste
2 cloves of garlic, crushed
2 tablespoons of olive oil
Juice of 1 lemon (optional)
Vegetables:
1 zucchini, sliced
1 eggplant, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
200g of sliced mushrooms (optional)
2 tablespoons of olive oil
Salt and pepper to taste
Fresh herbs (thyme, rosemary, or oregano) to taste
Preparation
:Prepare the meat: Season the meat with salt, pepper, garlic, olive oil, and lemon juice (if using). Let rest for 20-30 minutes in the refrigerator to absorb the flavors.
Preheat the grill (or heavy-bottomed skillet) to medium-high heat. If using a grill, make sure it's very hot.
Grill the meat for 3-5 minutes per side, depending on your desired doneness (rare, medium, or well-done). Set aside and let rest for 5 minutes before carving.
Preparing the vegetables
: In a bowl, toss the vegetables with olive oil, salt, pepper, and fresh herbs.
Place the vegetables on the grill or in a large skillet over medium heat. Grill for 3-5 minutes per side, until tender and charred. Cooking times vary: zucchini and bell peppers cook faster, while eggplant and onions may take a little longer.
Assembly:
Slice the meat (if necessary) and arrange on a large platter.
Arrange the grilled vegetables alongside. If desired, drizzle with olive oil and sprinkle with more fresh herbs.
