Baked Pork Leg Recipe ππ·π
Ingredients
(Serves 6-8):
1 pork leg (approximately 2.5 to 3 pounds)
4 cloves garlic, minced
2 tablespoons salt
1 tablespoon black pepper
2 tablespoons paprika (sweet or spicy, to taste)
1 tablespoon ground cumin
3 bay leaves
200 ml white wine
100 ml olive oil
2 large onions, sliced
4 large potatoes, sliced or cubed
2 carrots, sliced (optional)
Sprigs of rosemary or thyme (optional)
Preparation
:Marinade: Make shallow cuts in the skin of the pork leg to allow the marinade to penetrate.
In a bowl, combine the garlic, salt, pepper, paprika, cumin, white wine, and olive oil. Rub this mixture well all over the leg, including the cuts. Place the bay leaves in the cuts or under the skin.
Cover and marinate in the refrigerator for at least 4 hours, ideally overnight.
Preparation
: Preheat the oven to 350°F (180°C).
In a large roasting pan, place the onions, potatoes, and carrots (if using) on the bottom. Season the vegetables with salt, pepper, and a drizzle of olive oil.
Place the pork leg on top of the vegetables, skin-side up. Drizzle with the remaining marinade and, if desired, add sprigs of rosemary or thyme.
Roast:
Cover the roasting pan with aluminum foil and bake for about 2 hours.
Remove the foil, increase the temperature to 400°F (200°C), and roast for another hour, or until the skin is crispy and golden brown. Baste the meat with the pan juices every 20 minutes to maintain its juiciness.
Finish:
Check the meat for doneness (the internal temperature should reach about 165°F (70°C) in the center).
