 Strawberry Pavlova Recipe


Ingredients


For the meringue/meringue:

4 egg whites

200 g of sugar

80 g of cornstarch

For the cream:

200 ml heavy cream / cream 30% MG (very cold)

50 g of sugar

For decoration:

250 g of strawberries (or whatever fruit you prefer)

Powdered/icing sugar







Preparation


Beat the egg whites until stiff peaks. When you start to assemble, add the cornstarch little by little and then the sugar.

Beat well, it should be firm and shiny.


Place the preparation on parchment/baking paper to create a thick circle.

Bake for 1h20m at 120ºC.

You can do this the day before as the meringue/meringue needs to be cold to move on to the next step.


Before serving, whip the cream/sour cream into whipped cream. Don't forget that they must contain 30% fat and be very cold.

When you start to assemble, add the sugar little by little.


When it's ready, place it evenly over the meringues/meringue.


After cutting the strawberries into pieces, place them over the whipped cream and sprinkle with icing/icing sugar.


There's a Pavlova, the meringue/meringue should be firm and crunchy on the outside, and melting on the inside.
