 Shrimp and Pineapple Curry


INGREDIENTS


250 g Shrimp

1 can of Coconut Milk

1 Fresh Pineapple or Pineapple in Syrup

1 Onion

1 Red Pepper

3 tablespoons of Tomato Pulp

Juice of 1 Lime

to taste Curry

to taste Coriander

to taste Coconut Oil or Olive Oil

to taste Sa




PREPARATION METHOD


Chop the onion and red pepper and place in a pan with the coconut oil.


Let it cook until golden, then add the curry, stir well and add the coconut milk.


Add the pineapple pieces and tomato pulp, they will make the curry milder.


Next, add the cooked shrimp, if you want to save time.


Adjust the seasoning, add the lime juice and coriander.


Serve with vegetables or coconut rice.
