 Recipe for Greek spinach pie, spanakopita

Ingredients


6 sheets of filo pastry (brick)

olive oil

600 g spinach (fresh or frozen)

1 onion

1 clove garlic

salt

pepper

2 eggs

250 g ricotta

200 g cured cheese (feta)





Preparation


Chop the onion and sauté it with a little olive oil.

Still in the frying pan, add the salt, pepper and chopped garlic. Mix well and add the spinach. Cover and let it cook for about 5 minutes.

Stir and cover again. Leave it for another 5 minutes and set aside.

In a large bowl, mix the eggs with the crumbled cured cheese, ricotta and a little pepper.

Add the spinach and mix everything together.

Brush all the filo sheets with olive oil. First, place 4 sheets on top of each other. Then, place the remaining two sheets on top of each other.

The 4 sheets together will be the base. Place them on the bottom of the pan. Pour the filling. Fold the ends of the sheets inwards.

Cover with the remaining 2 sheets. Cut off the excess and place it together with the filling (to avoid waste). Now you can seal the edges.

Bake for 45 minutes at 180°C. If you prefer, sprinkle with sesame seeds before serving. Enjoy!
