Pasteis de Nata Recipe
Ingredients
Puff pastry
lemon peel
11 g vanilla sugar (1 sachet)
500 ml milk
60 g cornstarch
250 g sugar
6 egg yolks
Preparation
Unroll the puff pastry, if you bought it ready-made, and use a round mold (a glass can be used) to cut the pastry.
Place the molds in the mold that will go into the oven later.
Bring the milk to a boil. Add the vanilla sugar and lemon peel. Stir.
In the meantime, mix the cornstarch with the sugar and separate the yolks from the whites.
When the milk boils, remove it from the heat. Remove the lemon peel. Always off the heat, add the cornstarch+sugar mixture and stir. Now add the egg yolks and stir.
Bring the mixture to a boil until it thickens, on medium/low heat so it doesn't burn.
When ready, pour the cream into the molds prepared earlier.
Bake at 180ºC for 25-30 minutes. Another 2-3 minutes in Grill mode to brown.
Always keep an eye on it when in this mode, as some ovens are faster than others and there is a risk of burning the pastries.
