 Beef stew with beer - carbonnade flamande


Carbonnade Flamande is a typical dish from the North of France and Belgium. It is beef stew cooked over low heat, prepared with dark beer, a pinch of sugar and gingerbread (which helps thicken the sauce). Despite the cooking time, this sweet and sour recipe is very easy to prepare. It is served with potatoes (fried or boiled).


Ingredients


50 g butter

1 kg meat

50 g flour (wheat)

3 onions

salt

pepper

bay leaves

thyme

750 ml dark beer

2 tbsp brown sugar (we used vergeoise)

100 g gingerbread and spices (or sliced ​​bread)

mustard





Preparation


Cut the meat into cubes and coat it with flour. In a pan, melt the butter and sauté the meat until golden.


Then add the chopped onion and sauté a little. Add the thyme and bay leaves (we used a bunch) and season to taste with salt and pepper. Add the beer and sugar.


Spread the mustard on the slices of gingerbread (or sandwich bread). Cut them into cubes and place in the pan. Mix. Cover with the lid and cook on low heat for 2 to 6 hours. The meat should be tender.


It's ready. Serve with potatoes (fried, boiled or steamed). Or with rice.
