 Avocado and Egg Toast


INGREDIENTS

1 ripe avocado

2 eggs

2 slices of bread (can be wholemeal, rye or other)

q.b. Olive oil

q.b. Salt and pepper

q.b. Crushed red pepper or paprika or sesame seeds





PREPARATION


First, mash the avocado in a bowl until it becomes a puree. Add salt and pepper to taste. You can add a touch of lemon to prevent the avocado from browning.


Choose the way you prefer the eggs, you can fry them, poach them or even make an omelette to top the toast.


While the eggs are cooking, toast the slices of bread in the toaster or in a frying pan, lightly greased with olive oil.


Spread the avocado puree generously over the slices of toasted bread.


Place the eggs on top and season with salt, pepper or other seasonings to your taste.
