 Winter salad


INGREDIENTS

2 chicken breasts

125g couscous

1 red onion

4 carrots

1 zucchini

1 jar chickpeas

q.s. paprika

q.s. garlic powder

q.s. ginger powder

q.s. olive oil

q.s. balsamic vinegar

q.s. soy sauce

q.s. honey (optional)

q.s. salt and pepper


TIPS

You can replace the chicken with cubed feta cheese. You can also add raisins or dates to give it a more oriental touch.




PREPARATION METHOD


In a baking tray, start by placing the chopped vegetables and chickpeas, season with garlic powder, ginger, paprika, balsamic vinegar, soy sauce, olive oil and a pinch of salt. Cover well and bake for 20 minutes at 180ºC.


While the vegetables are roasting, prepare the couscous with 150 ml of boiling water, following the instructions on the package.


Season the chicken breast with salt, pepper, paprika and garlic, and grill well.


When the couscous is cooked, gently separate it with a fork.


Serve the couscous with the grilled vegetables and chicken breast. It's delicious!
