Ingredients


1 good tuna steak

Salt

Lemon juice

200g oyster mushrooms

Cider vinegar

1 cup buckwheat

1/2 mango

½ bunch of coriander

Sesame

Arugula

Lettuce

Dressing:

1/2 sliced ​​mango

Juice of ½ orange

Olive oil

Lemon juice

Coriander leaves

White miso

Nutritional yeast

Ground cumin

Ground black pepper





Preparation


1. Start by seasoning the tuna steak with salt to taste and a few drops of lemon juice.

2. Cut 200g oyster mushrooms and blanch in a bowl of boiling water.

3. Turn on the grill, add salt, add the oyster mushrooms and season with cider vinegar to taste.

4. Sauce: In a blender, add 1/2 sliced ​​mango, juice of ½ orange, olive oil to taste, lemon juice to taste, coriander leaves to taste, white miso to taste and nutritional yeast to taste. Blend with a hand blender.

5. Add ground cumin to taste, ground black pepper to taste and a little water. Blend again.

6. Meanwhile, remove the oyster mushrooms from the pan.

7. To a bowl with 1 cup of cooked buckwheat, add the remaining mango and mushrooms and drizzle with a generous amount of sauce. Mix everything together and add a few coriander leaves.

8. On the griddle, grill the tuna steak with sesame seeds on top.

9. Add arugula and lettuce to the bowl with buckwheat, drizzle with more sauce and stir. 10. Remove the tuna from the grill and plate.
