Salted fish
Ingredients
garlic
4 cloves
bay leaf
1 leaf
parsley
1 sprig
egg white
3 units
coarse salt
2 kg
pepper
1 tbsp
croaker (with scales, guts and gills removed)
2 kg
lemon
1 unit
extra virgin olive oil
steamed vegetable mix
2 packs (400 g)
Preparation
Step 1
Put 2 cloves of garlic, the bay leaf, half the parsley and an egg white in a food processor. Blend well until you get a paste.
Step 2
In a bowl, add the salt, the previous paste, the remaining egg whites and pepper. Mix everything with your hands, until the salt is well mixed with the seasoning.
Step 3
Preheat the oven to 200 ºC.
Step 4
Line a baking tray with baking paper. Make a first layer of salt and place the sea bass on top. Stuff the belly of the fish with lemon slices and the remaining parsley.
Step 5
Cover the fish with the remaining salt, so that it is completely covered.
Step 6
Place in the oven and cook for 40 minutes.
Step 7
When the fish is almost ready, heat the olive oil and the remaining chopped garlic. Heat over low heat, just to flavor the oil.
Step 8
Remove the fish from the oven and lightly tap the salt to break it up.
Step 9
Remove the salt crust and serve the fish with the vegetable mix.
