Pumpkin and Walnut Bread


INGREDIENTS


1 and 1/2 of baked pumpkin

4 units of Egg

1 cup of Oatmeal

1/2 cup of Rice flour

q.s. Grated Parmesan cheese

50 g of Walnut or other Nut

1 teaspoon of Yeast

q.s. Pumpkin seeds and other seeds

To bake the pumpkin

q.s. Salt

q.s. Olive oil

q.s. Pepper

q.s. Oregano, Thyme or Rosemary (optional)





PREPARATION METHOD


Start by baking the pumpkin or if you have leftover cooked or roasted pumpkin (or sweet potato) you can also use it. To roast, season only with salt, pepper and olive oil, but you can add oregano, thyme or rosemary, and place in the oven at 200ºC for about 20 minutes.


Place all the ingredients in a food processor or blender and blend until you get a smooth consistency.


Place in a loaf tin lined with baking paper, sprinkle with seeds and bake for 20 to 30 minutes at 180ºC.


Remove from the oven, let cool and slice. You can freeze it.
