Crab Rolls
Ingredients
100g butter
6 cloves garlic
4 cooked crabs
Salt to taste
1 sliced chilli pepper
White wine to taste
Lemon juice to taste
Brioche bread to taste
Chopped chives to taste
Mayonnaise:
1 egg
Oil to taste
Lemon juice to taste
Salt to taste
1 teaspoon mustard
Preparation
1. For the mayonnaise, start by beating the egg as you add the oil; add a few drops of lemon juice, salt and mustard.
2. In a frying pan, sauté the garlic with butter and add the inside of the crabs; season with salt and chilli pepper and cool with white wine. As soon as the alcohol evaporates, add the lemon juice; turn off the heat. 3. Fill the inside of the brioches with this filling and drizzle with mayonnaise.
4. Serve with chopped chives!
