 Caramelized apples with ice cream and chocolate


Ingredients


brown sugar

50 g

butter

25 g

large royal gala apple

3 units

rum

6 tablespoons

fleur de sel

½ teaspoon

lemon sorbet

6 scoops

apple covered in dark chocolate

6 units





Preparation


Step 1

Melt the brown sugar with the butter in a non-stick frying pan.

Step 2

Peel the apples, cut them in half and carefully remove the cores. Place them in the frying pan with the cut side down, cover and cook over moderate heat for 5 to 8 minutes (they should be soft but still whole).

Step 3

Carefully turn the apples halfway through to coat them well in the sugar. Remove them from the frying pan to serving plates.

Step 4

Pour the rum into the frying pan and return to the heat. Let it boil for 2 to 3 minutes, stirring constantly, until it thickens a little. Sprinkle with fleur de sel.

Step 5

Serve the apples with a scoop of lemon sorbet, accompanied by the apple slices covered in dark chocolate and drizzled with caramel.
