 Baked Cod Gratin


Ingredients


2 Norwegian cod fillets


4 medium potatoes


1 onion


4 garlic cloves


Olive oil


1 bay leaf


3 carrots


Béchamel sauce


Cured cheese to taste


Nutmeg to taste


Salt to taste


Pepper to taste





Preparation


1. Start by cooking the cod in two parts water to one part milk. Drain, flake and reserve the strained liquid.


2. Wash the potatoes very well, cut them into cubes and blanch them in the liquid in which the cod was cooked, seasoned with nutmeg. Drain and set aside. Save the liquid.

3. Chop the onion and garlic and sauté well in a generous drizzle of olive oil with the bay leaf. 4. Peel and grate the carrots and add them to the sautéed mixture, mixing well.

5. Add the flaked cod and the blanched potatoes, season with salt and pepper and mix.

6. If you are running low on liquid, take advantage and pour 1 ladle of the liquid from cooking the cod and in which you blanched the potatoes and add it to the pan. Reduce the heat and let it evaporate.

7. Prepare the bechamel sauce, adjust the seasoning and remove the pan from the heat.

8. Add the bechamel and cheese, if desired, mix well and spread on a baking tray.

9. Bake in a preheated oven at 180ºC for about 15 minutes, just to toast.
