 Bacon Tortilla


Ingredients


2 tablespoons of olive oil

2 medium onions cut into half moons

50g of bacon cut into small cubes

2 fresh tomatoes, seeded and cut into small cubes

8 beaten eggs

1 tablespoon of chopped parsley

Salt to taste

Pepper to taste

100g of potato chips

green salad to accompany





Preparation


1. In a frying pan, heat 2 tablespoons of olive oil and sauté 2 medium onions cut into half moons. Add 50g of bacon cut into small cubes and cook until golden.

2. Add 2 fresh tomatoes, seeded and cut into small cubes and let cook. Add 100g of potato chips, evenly distributed.

3. Pour 8 beaten eggs with 1 tablespoon of chopped parsley and salt to taste. Cover the frying pan with a lid and cook over low heat.

4. When the base is cooked, turn the tortilla over with the help of a plate.

5. Cover again until the tortilla is completely cooked.

6. Serve hot or cold with a green salad.
