Ingredients


Olive oil to taste

1 sliced ​​onion

3 sliced ​​garlic cloves

1 bay leaf

350 g of sliced ​​boiled potatoes

1/2 red pepper in strips

80 g of sliced ​​mushrooms

15 g of sliced ​​black olives

5 eggs

Salt to taste

Pepper to taste

Chopped parsley to taste





Preparation

In a non-stick frying pan, add the onion, olive oil, bay leaf and finally the garlic. Let the onion and garlic brown.

Add the sliced ​​potatoes and fry a little on both sides. Then add the sliced ​​pepper, sliced ​​olives and mushrooms and cook.

In a separate bowl, beat the eggs, add the parsley and season with salt and pepper. Add to the previous mixture and let it cook well on one side, then turn it over with the help of a plate and let it cook for a few more minutes.

You can serve it with a rocket salad and grated carrots.
