Spanish King Cake Recipe
Ingredients
For the 1st dough:
50 ml of whole milk
90 g of wheat flour
2 g of yeast / baker's yeast
For the brioche:
The 1st dough
100 ml of whole milk
15 ml of orange blossom water
350 g of wheat flour
4 g of yeast / baker's yeast
zest of one orange
zest of one lemon
80 g of sugar
2 eggs
60 g of butter
1 teaspoon of cinnamon
5 g of salt
Preparation
Step 1 - 1st dough:
Pour all the ingredients into a salad bowl and mix with your hands until it forms a ball.
Cover with plastic wrap and refrigerate overnight.
Step 2 - 1st fermentation:
Mix all the ingredients except the milk and butter at medium speed.
Step 3 - Once everything is mixed, add the milk little by little.
Knead for 10 minutes at medium speed. Now, add the butter little by little and knead for another 15 minutes.
Step 4 - Test the elasticity:
If the dough is elastic, it is ready for good fermentation. If not, continue kneading.
Step 5 - Grease a salad bowl with oil. Place the dough inside.
Cover everything with a slightly damp cloth and leave it to rise for 1h30m.
Step 6 - 2nd fermentation:
Place the dough on the table. Knead and then form a ball.
Cover the dough with a slightly damp cloth and leave it on the table for 15 minutes.
Step 7 -Place the dough on a baking tray covered with greaseproof paper and form a crown.
Cover with a slightly damp cloth and leave to rise for another 1h30m.
Step 8 - Baking and filling:
Brush with egg yolk.
Add the almonds and pearl sugar.
Step 9 - Bake for 25-30 minutes at 180ºC and let cool.
Step 10 - Cut in half.
For the filling, choose vanilla cream cheese, or use a ready-made one that you can find in supermarkets.
Cover and that's it!
