 Seafood Paella


Ingredients


200g round rice

300g shrimp

7 large prawns

500g mussels

200g clams

3 squid

1 red pepper

1 green pepper

2 tomatoes

2 cloves of garlic

1 liter of water

1 small bunch of parsley

salt

pepper

saffron

food coloring (or paprika)

olive oil

1/2 lemon





Preparation


Step 1 - Shrimp broth:

Peel the shrimp and 3 prawns. Remove the shells and heads and sauté them in olive oil in a large saucepan for 5 minutes. (Set the shrimp and 3 prawns aside)

Step 2 - Add 1 liter of water. Bring to a boil and, once boiling, cover with a lid and cook for 20 minutes. Remove the pot from the heat. Using a pestle and mortar, crush the heads in the broth. Then, strain the broth and set aside.

Step 3 - The mussels:

Clean them and remove the excess (the part that protrudes from the closed shell). Place in a pan. Add a little water, cover and cook for 15 minutes. After this time, the mussels should be open. Set aside 6 whole ones for decoration at the end. Remove the rest from the shells. Set aside.

Step 4 - In a paella pan, heat the olive oil and sauté the coarsely chopped peppers.

Step 5 - While the peppers are sautéing, in a bowl, crush the garlic cloves, chop the parsley, add the salt, pepper and saffron. Mix well. Step 6 - Add this seasoning to the peppers as soon as they start to cook. Peel the tomatoes, mash them well (make a puree of the tomatoes) and add them as well. Let them cook for about 5 minutes.

Step 7 - Clean the squid, remove the meat and cut them into rings. Add them to the paella pan. Add the cleaned clams (always leave them in their shells).

Step 8 - Let them cook for about 10 minutes, stirring occasionally. The clams should open.

Step 9 - Then add the rice, shrimp and the 3 prawns that we reserved in step 1 (where we used their shells to make the broth). Mix well.

Step 10 - Distribute evenly in the paella pan. Pour the broth. Add the food coloring and mix again. Now place the other 4 prawns on top of everything (see photo, it is used for decoration). When it starts to boil, leave it on low/medium heat for about 20 minutes. After this time, turn off the heat and cover the paella with a cloth. Let it rest for 5 minutes.

Step 11 - Seafood paella ready to be enjoyed. Garnish with 1/2 lemon.
