Saffron and Pea Rice
Ingredients
Olive oil to taste
1 onion
2 cloves of garlic
1 bay leaf
Salt
Pepper to taste
1/2 cup of peas (fresh or frozen)
2 cups of long grain rice
3 teaspoons of saffron
Preparation
Put the olive oil in a pan and sauté the chopped onion, chopped garlic and bay leaf.
When the onion is golden brown, add the peas and stir.
Add the rice and let it fry for two minutes, stirring constantly so that it doesn't stick.
Then add the water (for two portions of rice, double the amount of water) and add the saffron. Season with salt and pepper.
On low heat, let the rice simmer slowly for approximately 10 minutes. After this time, remove from the heat and let it rest for another 5 minutes to finish cooking and become loose.
