 Pasta with fresh sausage sauce Recipe


Ingredients


180 g pasta (we used tortiglioni)

200 g fresh sausage

200 ml tomato sauce

2 bay leaves

40 ml red wine

1/2 onion (small)

olive oil to taste

black pepper to taste

salt to taste





Preparation

Step 1 - Remove the skin from the sausage and cut the meat into pieces.

Step 2 - Finely chop the onion. Fry it in the olive oil for a few minutes and add the bay leaves.

Step 3 - Add the sausage cut into pieces and brown it over medium heat for about 5 minutes, stirring frequently.

Step 4 - Pour the wine into the pan and continue cooking until it has almost completely evaporated.

Step 5 - Now add the tomato sauce and cook over low heat for about 25 minutes. (Add a little of the pasta cooking water if necessary).

Step 6 - Cook the pasta in plenty of salted water.

Step 7 - Season the sauce with salt and pepper. Drain the pasta when al dente and pour it directly into the pan with the sausage sauce.

Step 8 - Mix well.

Step 9 - The pasta with sausage sauce is ready! If desired, serve with grated Parmesan or Pecorino cheese.
