Preparation

HOMEMADE PEPPER SAUCE

In a small glass or stainless steel pan, boil the peppers, peeled garlic, salt and sugar in the vinegar until soft.

Remove from heat and let cool. Transfer to a blender and blend until smooth. Pass through a sieve, pressing with a spoon to remove the seeds. Add more vinegar if you want a more liquid consistency. Store in sterilized, covered jars in the refrigerator.

PEPPER SAUCE II

Combine all the ingredients and blend in a blender or food processor.

Place in a sterilized glass jar and keep in the refrigerator. For less heat, you can remove the seeds from the pepper.

PEPPER SAUCE III

Blend all the ingredients in a blender until smooth. Place in sterilized jars and store in the refrigerator until ready to serve.
