German Potato Salad Recipe
Ingredients
1 ½ kg potatoes
200 ml hot beef or chicken stock
1 finely chopped onion
50 ml olive oil
4 tablespoons vinegar
2 tablespoons Dijon mustard
1 tablespoon sugar
salt and pepper to taste
2 tablespoons chopped chives or parsley
Preparation
Boil the potatoes in salted water. When cooked, drain and let cool completely.
Remove the skin and cut into thick slices. Place the potatoes in a bowl, add the stock and onions and mix carefully.
In another bowl, mix the olive oil, vinegar, mustard, sugar, salt and pepper until smooth. Drizzle the potatoes with this vinaigrette, add the chopped chives or parsley.
Adjust the seasoning to taste and serve hot, at room temperature or cold. It is recommended to let the salad rest for at least an hour or two to develop the flavor.
